Cooking with coconut flour is a real challenge and I made these cookies 5 times before I got them right! Almond flour is much more forgiving for gluten-free baking but I wanted a mixture that would create the right texture. I had many happy taste testers with this recipe so I hope you enjoy it!

Ingredients

Instructions

  1. Preheat the oven to 350° F.

  2. Mix the eggs, palm shortening or butter, vanilla, cinnamon, nutmeg, and sweetener in a large bowl.

  3. Sift the coconut flour into a small bowl then add the baking soda, salt, and almond flour.

  4. Combine the two mixtures and add the chocolate chunks.

  5. Place parchment paper on cookie sheets.

  6. Spoon the dough on the cookie sheet in 1-inch mounds.

  7. Bake for 15-17 minutes until golden brown.
